Culinary History of Italy
Time Around A Table: A Culinary History of Italy Food is a window into the culture and values of any society. In this seminar we will explore the history of Italian culture by investigating the ever-changing issues relating to food, through books, articles, films, recipes, and cooking. How did production and consumption change over time? What did the Ancient Romans eat? What was Italian cuisine like before pasta and tomatoes? What triggered the Italian appetite to change? Such questions allow us to examine what culinary choices reveal about today’s Italy.
I loved this class! I made some of my very best friends and really enjoyed the laid back, seminar style setup. I learned many new writing techniques and felt a lot of growth in my presentation confidence. I loved how close our class got and we cooked family style Italian dinner together twice at the Humanities house. I miss everything about this class and wish I could take it again!

This class was a lot of fun. Professor Brancoli is very passionate about the topic! She made the class interesting and engaging. Constant readings were due before each class, and several discussion posts, but the workload was not too intense. Class participation is expected, but the environment is relaxed.
Ilaria is a fantastic professor. She brings a positive attitude and enthusiasm to each class. Essays are basically ungraded and readings are pretty interesting and unchallenging. Outside of class, we made pasta and pizza as a class. Overall, it's a relaxed, informative, and enjoyable class.
Ilaria is a fantastic professor who really cares about her students. The content was pretty interesting and covered a lot of topics. It’s one of the only classes where you get a home cooked Italian meal. Could not have been happier with this seminar.
