John Huddleston
I took this course as my winter term course, and thought it was a great way to focus on a class that was not related to my major. I would probably take it only if you have an actual interest in this topic though.
You have to wake up early during the entire month and January and it is extremely cold in the morning. Most of the class you spend meditating in a variety of forms such as sitting, walking, and sometimes laying down if people are able to stay awake. For your grade, you have to write a paper and do a group presentation. Very easy grading and nice guy.
Huddleston is a great professor, who genuinely cares about the field of meditation. He has a worldly perspective, and applies that to the class. Most of in-class time is spent trying different meditation practices, or watching videos on meditation. We had one paper during the semester that we had to present on. This paper was informed by an assigned reading, and you could sign up for due-date slots throughout the semester. He definitely is a light grader, but goes easier on the students who go sooner. He's very accommodating, and overall made the class a great experience!
