I took this course in Winter 2026 and received an A. You write 1 essay, which is graded very fairly. The final project is recreating an endangered food, which is a lot of fun. The professor is passionate and accommodating. For field trips, dress extra warm. It gets very cold and the entire class is outside for the trips to local farms and maple syrup sugaring centers.
